What we mean by cold chain

The cold chain is the unbroken sequence of temperature control from harvest to delivery. Most fruit you buy in Kolkata has been broken at least once — sat in a hot truck, in a market crate, on a delivery rider's open bag. Each break shortens shelf life and degrades flavour. We don't break ours.

How ours works

  1. At the source. Most of our suppliers ship in refrigerated trucks. Where they don't, we send our own.
  2. At our store. Every fruit lives in a temperature-controlled cold room set to 2–8°C, with humidity tuned per variety. Mangoes ripen on a separate counter at 18°C; nothing waits in ambient air.
  3. Hand-grading. Every fruit comes out of cold storage briefly for grading at dawn, then goes back. The window is minutes, not hours.
  4. Picking. When your order comes in, we pull the items, pack them in insulated bags with frozen gel packs, and add a temperature logger. The bag goes onto a dedicated cold-chain bike.
  5. Delivery. Our riders deliver only HelloRaw orders — they're not running multi-vendor stops. The bag stays sealed until your door.
  6. The logger. Each bag carries a small temperature logger that records the entire journey. If the temperature goes above 12°C at any point, the bag flags itself and we replace the order before you have to ask.

Why we invest in this

The replacement guarantee is only credible if the chain holds. Every kilometre of broken cold chain is a kilometre of degraded fruit and an order we'd rather not ship.
